When cooking caramel using the wet method, the cooking time will be longer than the dry method. Apart from that, using the damp method makes it easy to control the level of caramel that will be made, whether light or medium.
However, did you know it's better not to stir continuously when cooking caramel? Usually, this often happens to those of you who use the wet method in making caramel.
Stirring the caramel too often will produce a rough texture and clumps forming crystals. Therefore, it's best not to mix the caramel until it changes color. When it changes color, the sugar is completely dissolved.
